Roasted butter nut squash rocket and pine nut salad

About the Recipe

This winter salad can be prepared in less than half an hour.

Ingredients

  • 1 small butter nut squash or any other small squash

  • 100 g rocket

  • Extra virgin olive oil

  • 10 Fresh sage leaves

  • 1 head of garlic

  • 25g of pine nuts

  • 50 ml hazelnut oil

  • 1/2 lemon

Preparation

Step 1


Peel the squash, removce the seeds and cut the squash into mouth managble segmants put in a roasting tray, add the sage, a good drizzle of olive oil salt and ground pepper. Mix together
